What sense does it make to push all production buildings into one corner and then fill up the farm with, for example, banana trees? I guess, you will need a huge number of saws to clear the farm. What are the benefits?

What are the benefits? Perhaps gaining coins this way. Banana fruits are efficient for this purpose, of course other fruits either. Nevertheless I think it should be possible to arrange buildings and animals (stables) a little bit more appealing instead putting it in corners. However, everyone has one's personal play-style since not every farmer cares about that.

Personally I think it shows the beauty of the game. One game and yet it can be played in so many ways.
My guess to an answer to your question, I think this farmer is focused on getting coins at the moment so more practicality than beauty. Perhaps the focus will change over time or perhaps it is a baby farm with a specific purpose.
However you actually make a point out of something I love about HD, namely that many of us take time to check out other farms. In how many other games do one notice other players like that?
